Garlic Parsley Butter Roasted
Ingredients:
2 dozen fresh oysters, shucked
1 stick unsalted butter, softened
1/4 cup roughly chopped fresh parsley
2 tbsp minced shallots
1 1/2 tsp grated lemon zest
1 tbsp roasted garlic
salt and freshly ground pepper
Steps:
Puree the butter, parsley, shallots, lemon zest, roasted garlic, and a pinch of salt and pepper in a food processor until smooth.
Preheat the oven to 375 degrees. Shuck the oysters, cutting the top and bottom abductor muscles, leave them in their shells, and place them on baking dishes or the grill. Place a heaping teaspoon of garlic-parsley butter on each oyster. Roast the oysters until the butter is melted, 8 to 10 minutes. Serve immediately.
